Ingredients:

• 1 lbs chicken (diced)
• 1 jar chipotle peppers in adobe sauce( I typically only use 3 or 4 peppers)
• 32 oz  mayo
• 32 oz  sour cream
• 1 tablespoon samdog rub
• 3 tablespoon olive oil
• 2 cups shredded cheese (colby jack)
• 1 cup tomatoes (small diced)
• ½ cup onion (small diced)
• ½ cup sliced olives

Directions:

1. You will need: food processor, frying pan, 9 by 13 casserole dish, and 1 Large bowl.
2. In frying pan heat oil to med heat then add in chicken and samdog rub cook for 5 min then add in 1 chipotle pepper and as much of the adobo sauce as you can and cook the chicken in it until done.
3. In food processor finely chop chicken and 3 chipotle peppers. Then in large bowl combine sour cream, mayo, chicken, and peppers. Make sure to really mix this together. Now pour into casserole dish and top with shredded cheese, tomatoes, onion, and olives. Use Tostitos( I like scoops) to scoop out dip and ENJOY!!!

Ingredients:

• 1 small onion, chopped
• 7 cloves garlic
• 1/2 cup olive oil
• 1/2 cup vinegar
• 1/2 cup soy sauce
• 2 tablespoons chopped fresh rosemary
• 2 tablespoons Dijon-style prepared mustard
• 2 teaspoons salt
• 1 teaspoon black pepper
• 1 (2 pound) tri-tip steak

Directions:

1. Place onion, garlic, olive oil, vinegar, soy sauce, rosemary, mustard, salt, and pepper into the bowl of a food processor. Process until smooth. Place steak in a large resealable plastic bag. Pour marinade over steaks, seal, and refrigerate for about 3 hours.
2. Preheat the grill for high heat.
3. Brush grill grate with oil. Discard marinade, and place steak on the prepared grill. Cook for 7 minutes per side, or to desired doneness.

Ingredients:

• 1 gallon apple juice
• 1/2 gallon of apple cider
• 1 c turbinado sugar
• 1 litre of alcohol(moonshine,PGA,or everclear)

Directions:

1. Add items into a pot and bring to a boil til dissolved then cool
2. Add 1 litre of alcohol(moonshine,PGA,or everclear)
3. Strain into jars with a cinnamon stick refrigerate till cold

A nice side dish to go with any BBQ is, Cabbage Salad w/ kidney beans. It is a very simple recipe that can be made in minutes.
Ingredients:

• 1 small head cabbage
• 2 small onions
• 2 16oz can dark kidney beans
• Mayo. to taste, I use Hellmann’s
• 2 TBS lemon juice
• Salt and Pepper to taste

Directions:

1. Shred the cabbage fine, or slaw chop, dice the onions, drain the kidney beans. Mix the cabbage onions Mayo. and lemon juice in a large bowl.
2. I add the kidney beans last so they do not fall apart during the stirring, and salt and pepper to taste.

Ingredients:

• 3 tablespoons butter
• 1/4 cup fresh jalapeño peppers, seeded and finely diced
• 1/2 cup Green Onion, cleaned, ends cut off; use bottom three inches
• 2 cloves garlic, minced
• 1 teaspoon kosher salt
• 1/2 teaspoon black pepper, fine grind
• 1 1/4 cup heavy cream
• 1 cup half & half
• 8 oz (2 cups) Cheddar-Jack Cheese
• 5 large Idaho russet potatoes, peeled and sliced into thin rounds (about 1/16-inch thick)

Directions:

• Melt butter in a medium saucepan over medium-high heat. Add jalapeños, green onion, garlic, salt and pepper and sauté for 4 to 5 minutes, stirring constantly.
• Add cream and half & half and bring to a simmer. When cream is hot, remove pan from stove. Stir in both cheeses and blend thoroughly.
• Place potato slices in a large mixing bowl. Add cream mixture to bowl, folding potatoes and sauce gently together.
• Spray a 9-by-13-inch glass baking dish with non-stick coating. Pour in potato mixture and evenly distribute potatoes and sauce.
• Cover tightly with aluminum foil. Bake in a preheated 350-degree oven for 45 minutes.
• Remove foil and cook an additional 15 minutes to brown potatoes.

I love to smoke chicken wings for parties, and they are always a hit.

Ingredients:

• Fresh wings
• Your favorite BBQ Rub
• Texas Pete Wing Sauce
• 1 Stick of Butter
• 1/2 cup Apple Cider Vinegar
• hot sauce

Directions:

I buy the biggest fresh wings I can, separate the flats from the drummies, throw the tips away. Season well with your favorite rub – I like Smokin’ Guns Hot for wings, and smoke at 300 degrees until they hit 180. The sauce I use is Texas Pete’s wing sauce, and I add a stick of butter, about a half cup of apple cider vinegar, several shots of your favorite hot sauce, and a tablespoon or two of garlic powder. Heat until blended, then soak the wings in them. They go fast around here.?
